Pickled Onion Appetizer for Meat
Ingredients
- Spanish onions 1 head

- Champagne Vinegar 10 fl oz
- Sugar 5 oz
- Coarse Salt 1 tablespoon
- Scallions 1 bunch
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Thinly slice the sweet and red onions. Transfer to a bowl and cover with ice water. Close and let sit for 30 minutes, changing the water once during this time.
Step 2
Drain the onions and dry them well. Transfer to a clean bowl.
Step 3
In a saucepan, combine the vinegar, sugar, and salt. Bring to a boil, stirring until the sugar dissolves. Pour over the onions and let cool, stirring occasionally.
Step 4
Once the onions with the marinade have cooled, add the chopped green onions, mix well, and sprinkle with black pepper.
