Pickled Green Tomatoes

Ingredients

  • Chili Flakes ½ teaspoon
  • Bay leaf 1 piece
  • Coriander essential oil 1 tablespoon
  • Cinnamon 1 piece
  • Green peppercorns 1 tablespoon
  • Ground clove 6 pieces
  • Garlic 2 cloves
  • Apple Cider Vinegar 15 fl oz
  • Water 5 fl oz
  • Honey 2 tablespoons
  • Salt 1 tablespoon
  • Mixed tomatoes of different colors 20 oz

Step-by-Step Guide

Step 1

Cut the tomatoes into 4 pieces or into thin slices.

Step 2

In a pot, mix the red pepper flakes, bay leaf, coriander seeds, cinnamon, cloves, garlic cloves, black peppercorns, vinegar, water, honey, and salt. Bring to a boil and cook for 3 minutes.

Step 3

Meanwhile, sterilize the jars.

Step 4

Pack the tomatoes tightly into the jars and pour the brine to the top.

Step 5

Seal tightly with lids and store in the refrigerator for up to three months.
