Pickled Daikon
Ingredients
- Rice Vinegar for Sushi 5 fl oz
- Daikon 1 piece
- Sugar 1 tablespoon
- Salt 1 teaspoon
Step-by-Step Guide
Step 1
To prepare pickled daikon, wash it, peel it, cut it into sticks, and arrange it vertically in a jar.
Step 2
In a container, mix 100 ml of rice vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt (these proportions are for 100 grams of daikon, which fits in a 250-gram jar).
Step 3
In a small saucepan, bring 3 tablespoons of water to a boil and add a pinch of saffron. Once it starts boiling, remove the mixture from heat and strain it into the container with the vinegar mixture.
Step 4
Then pour the marinade over the daikon, seal the jar with a lid, and leave it in a warm place for a week.
Step 5
After that, place the pickled root in the refrigerator.
