Peppers with Cheese
Ingredients
- Olive Oil 3 spoons
- Salted pork belly 5 oz
- Onion ½ heads
- Ricotta cheese 5 oz
- Parmesan Cheese 0 oz
- Frozen green bean pods 5 oz
- Sweet Pepper 24 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Sauté finely chopped pancetta (or bacon) in olive oil over low heat for five to seven minutes, until it becomes brown and crispy.
Step 2
Using a slotted spoon, transfer the meat to paper towels, then add the finely chopped onion to the skillet. Sauté for five minutes, until translucent, then remove from heat and let it cool slightly.
Step 3
In a bowl, combine the onion, bacon, ricotta, grated Parmesan, and peas. Season the mixture with salt and pepper to taste.
Step 4
Cut off the tops of the peppers along with a small slice of flesh to create a wide opening for easily removing the seeds and membranes. Clean out the peppers and use a teaspoon to stuff them with cheese. Line a baking sheet with parchment paper, grease it, and place the peppers on it. Put in a preheated oven at 355°F for about eighteen minutes. Allow the peppers to cool slightly.
