Penne with Mustard-Mushroom Sauce
Ingredients
- Penne rigate 10 oz
- Olive Oil 1 tablespoon
- Shallot 3 pieces
- Garlic 3 cloves
- Fresh Mushrooms 10 oz
- Dijon Mustard ½ tablespoon
- Salt to taste
- Medium-dry sherry 0 fl oz
- Ground Black Pepper to taste
- Crème fraîche ½ cup
- Grated Pecorino Pepato Cheese 0 oz
- Chopped Sage Leaves 2 tablespoons
Step-by-Step Guide
Step 1
Cook the pasta in boiling salted water until al dente. Drain.
Step 2
In a large skillet, heat the olive oil over medium heat. Add the finely chopped shallots and sauté lightly, then add the minced garlic and thinly sliced mushrooms. Stir well and sauté lightly, then add the mustard and sherry. Season with salt and pepper to taste.
Step 3
Cook, stirring, until the mushrooms are tender and all the liquid has evaporated. Remove from heat.
Step 4
Add the mushrooms, crème fraîche, Parmesan, and parsley to the pasta. Gently mix and serve immediately.
