Peas with Ham
Ingredients
- Safflower Oil 3 tablespoons
- Scallions 2 bunches
- Green Peas 5 lbs
- Sugar 1 teaspoon
- Serrano Chili 5 oz
- Salt to taste
Step-by-Step Guide
Step 1
Heat the oil in a pot. Add finely chopped green onions and cook over low heat, stirring, for 3-4 minutes, but do not let them darken. Add the peas and sauté for a few more minutes. Then pour in 275 ml of water, stir in the sugar, cover with a lid, and cook for 15 minutes.
Step 2
Meanwhile, finely chop the ham and add it to the pot with the peas: cook for another 20 minutes until the peas are soft. Season with salt to taste and serve immediately.
