
Pear and Cheese Quesadilla

Description
If desired, the pears can be sliced thinly instead of finely chopped and caramelized as well. Add the caramelized pears to the tortilla with the cheese.
Ingredients
- Butter 1 tablespoon
- Brandy 2 tablespoons
- Brown Sugar 2 tablespoons
- Cinnamon a pinch
- Meyer Lemon Juice 1 tablespoon
- Walnuts 0 oz
- Goat cheese 5 oz
- Tortillas 4 pieces
- Brie cheese 5 oz
- Salt a pinch
- Pears 1 piece
- Vegetable Oil 0 fl oz
Step-by-Step Guide
Step 1
Prepare the pear sauce. In a skillet, heat the butter. Add the pear pieces (peeled and finely chopped), and cook, stirring, for 1–2 minutes. Add the sugar and cinnamon, and optionally, a pinch of salt. Bring to a boil, reduce the heat, and cook, stirring, for 3–4 minutes. Add the brandy and lemon juice. Cook until the sugar dissolves and the pears are soft. Add the finely chopped walnuts. Cook for 1 minute. Set the sauce aside.
Step 2
On half of a tortilla, place crumbled Gorgonzola cheese and a few pieces of Brie cheese. Cover with the other half of the tortilla. Press down lightly. Repeat with the remaining tortillas. In a grill pan, heat the vegetable oil. Fry the tortillas for 2 minutes on each side or until the cheese is slightly melted. Serve warm with the pear sauce.
