
Pea Purée with Mint and Cilantro

Description
Any herbs of your choice will work, but try to avoid strong-tasting herbs like parsley, so it doesn't overpower the flavor of the peas.
Ingredients
- Cilantro leaves ½ bunch
- Frozen Green Peas 0 oz
- Fresh Mint 10 stems
- Olive Oil 4 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Without thawing, pour water over the peas and place on low heat.
Step 2
To preserve the color and flavor, it is important not to bring the water to a boil; heat it to 60-70°C (140-158°F) so that the peas thaw but do not cook.
Step 3
Drain the water and transfer the peas to a blender.
Step 4
Add olive oil, mint leaves, and cilantro, season with salt and pepper.
Step 5
Blend to the desired consistency. For a smooth, silky texture, you may need to add more oil. You can leave some peas partially unblended for a variety of textures. Alternatively, you can mash them in a mortar and pestle or with a potato masher.
Step 6
Keep warm.

Serve with toast or as a side dish with meat or salmon.
