
Pea Porridge with Onions

Description
It is said that pea porridge originated in Poland during the Middle Ages and was a favorite dish of King Sigismund III. The porridge was slowly simmered in the oven and served on the royal table with bacon and other smoked meats. Since then, the cooking technique has hardly changed: peas are soaked overnight, simmered for a long time over low heat, and the cooked porridge is combined with any savory fillings. In this case — with onions.
Ingredients
- Pea shoots 1 glass
- Onion 1 head
- Salt to taste
- Vegetable Oil 0 fl oz
Step-by-Step Guide
Step 1
Rinse the peas and soak them in hot water for 10 hours.
Step 2
Drain the peas in a colander, transfer them to a pot, and add fresh water until it covers the peas by two fingers.
Step 3
Bring the peas to a boil, then reduce the heat and simmer until the peas are completely soft, about 1.5 hours.
Step 4
Peel and finely chop the onion.
Step 5
In a skillet, heat vegetable oil and sauté the onion until golden brown, which will take about 4 minutes.
Step 6
Add the cooked peas to the skillet with the onions, stir, and heat for another 5 minutes. Finally, season the porridge with salt to taste.
