Ingredients
- Olive Oil 1 tablespoon
- Pancetta 5 oz
- Onion 1 head
- Dry White Wine 1 cup
- Green Peas 5 cups
- Garlic 1 clove
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a skillet, heat the olive oil, add finely chopped onion and finely chopped pancetta, and sauté over medium heat for about 10 minutes until the onion is soft and the pancetta is browned.
Step 2
Add the minced garlic and cook for another 1-2 minutes until fragrant.
Step 3
Add the wine, peas, and black pepper. Cover and simmer for 5 minutes, then uncover and simmer for another 4-5 minutes until the liquid evaporates and the peas are almost tender. Season with salt and serve.
