Pasta with Zucchini, Basil, and Almonds
Ingredients
- Pasta 5 oz
- Roasted Almonds 2 tablespoons
- Zucchini 2 pieces
- Garlic 1 clove
- Basil 1 bunch
- Olive Oil 2 teaspoons
- Grated Parmesan cheese 3 tablespoons
- Lemon Juice 1 tablespoon
Step-by-Step Guide
Step 1
Cook the pasta in salted water according to the package instructions. Meanwhile, finely chop the almonds and zucchini, and crush the garlic.
Step 2
Heat the oil in a large skillet and sauté the zucchini for 2-3 minutes until softened, then add the garlic and half of the basil leaves and sauté for another minute.
Step 3
Drain the pasta, add the zucchini, almonds, remaining basil leaves, Parmesan, salt and pepper to taste, and lemon juice. Mix everything together and serve.
