- Olive Oil 2 tablespoons
- Young zucchini 0 lbs
- Coarse Salt to taste
- Ground Black Pepper to taste
- Lemon 1 piece
- Green Tagliatelle Pasta 20 oz
- Ricotta cheese ½ cup
Step-by-Step Guide
Step 1
Preheat the oven to 445°F. Grease 2 baking sheets with oil and lay out thinly sliced zucchini in a single layer. Brush with olive oil, season with salt and pepper. Bake in the oven until tender and golden, about 25–30 minutes, occasionally turning the baking sheets.
Step 2
Meanwhile, in a large pot of boiling salted water, cook the pasta until al dente. Drain.
Step 3
Add olive oil, lemon zest, and zucchini to the pasta. Mix well and serve with ricotta.
