Pasta with Young Zucchini and Cherry Tomatoes

Description
Zucchini can also be combined with bell peppers (based on 1 small zucchini to half a large pepper).
Ingredients
- Pasta (corkscrew) 20 oz
- Garlic 4 cloves
- Marinated cherries 15 pieces
- Fresh basil leaves to taste
- Ground Black Pepper to taste
- Grated Pecorino Pepato Cheese to taste
- Olive Oil 3 tablespoons
- Young zucchini 4 pieces
Step-by-Step Guide
Step 1
In a large pot, bring water to a boil for the pasta. Meanwhile, prepare the vegetables. Cut the zucchini into thick strips and finely chop the garlic. Halve the cherry tomatoes.
Step 2
Add the pasta to the boiling salted water and start working on the vegetables. Sauté the zucchini in olive oil over medium-high heat until they become soft. Add the finely chopped garlic. You can add a pinch of ground chili pepper for heat.
Step 3
You can remove the zucchini or push them to the side.
Step 4
In the same skillet, sauté the halved cherry tomatoes for a couple of minutes on each side. Do not mix them with the zucchini and make sure the tomatoes do not burst. Sprinkle with dried basil.
Step 5
On a plate, place the pasta, add the zucchini on top, and garnish with cherry tomatoes.
Step 6
Sprinkle with grated Parmesan.
