Pasta with Wild Mushrooms
Ingredients
- Dry White Wine 0 fl oz
- Olive Oil to taste
- Parmesan Cheese 0 oz
- Ground Black Pepper to taste
- Cream 22% 10 fl oz
- Ocean salt to taste
- Thyme 2 sprigs
- Truffle Oil to taste
- Garlic 2 cloves
- Fettuccine Pasta 5 oz
- Fresh Mushrooms 15 oz
Step-by-Step Guide
Step 1
Bring a pot of water to a boil for the pasta. Add salt to the water.
Step 2
Meanwhile, finely chop the garlic. Clean the mushrooms, soak them in water, drain, soak again, and drain again, then dry and chop coarsely. Do not soak the mushrooms for too long — they absorb water easily, and excess moisture is not needed.
Step 3
Heat a skillet, add the garlic and mushrooms, and sauté well.
Step 4
Tear the thyme leaves and sprinkle them over the mushrooms. Chop the parsley. When the mushrooms turn golden, pour in the wine, reduce the heat, and wait a few minutes for it to evaporate.
Step 5
Then add the cream. Check the pasta to ensure it is al dente, drain it, leaving a little water. The mushrooms with cream will turn into a thick sauce, and it’s worth thinning it slightly with the cooking water.
Step 6
Add the pasta to the sauce and mix well.
Step 7
Remove from heat, sprinkle with parsley, and grate Parmesan over the top.
Step 8
Serve on a plate, add a few drops of truffle oil, a little more Parmesan — and it’s delicious!
