
Pasta with Vegetables 'Rimini'

Description
You can use any small pasta instead of orzo.
Ingredients
- Orzo Pasta 15 oz
- Eggplants 1 piece
- Orange Bell Peppers 1 piece
- Olives stuffed with lemon 0 oz
- Fresh basil leaves to taste
- Spanish onions 1 piece
Step-by-Step Guide
Step 1
Boil the pasta in salted water.
Step 2
Cut the pepper and eggplant (I used zucchini instead of eggplant) into strips, and slice the onion into half rings.
Step 3
Sauté the onion in olive oil. Then add the eggplant and pepper, cook for 8–10 minutes, season with salt and pepper. Finally, add the olives sliced into rings and basil.
Step 4
Combine the pasta with the vegetables, heat for 1 minute.
