Pasta with Tuna, Spinach, and Lemon
Ingredients
- Pasta shells 20 oz
- Canned tuna in its own juice 1 can
- Frozen spinach discs 15 oz
- Meyer Lemon Juice 1 tablespoon
- Minced garlic 3 cloves
- Onion 1 head
- Grated Pecorino Pepato Cheese 5 oz
- Olive Oil 0 fl oz
- Ocean salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat a skillet and add olive oil.
Step 2
Finely chop the onion and sauté it over low heat.
Step 3
Add the frozen spinach to the partially cooked onion.
Step 4
When the spinach is thawed and cooked with the onion, add the minced garlic, tuna, lemon juice, salt, and pepper. Mix everything well until a uniform green-pink paste forms.
Step 5
In boiling water, add salt and a tablespoon of olive oil, and cook the fusilli until al dente. Drain the water.
Step 6
Serve the fusilli on plates, top with the tuna-spinach mixture, and sprinkle with grated Parmesan.
