Ingredients
- Penne rigate 10 oz
- Onion 1 head
- Garlic 2 cloves
- Tomatoes 2 pieces
- Canned tuna in its own juice 1 can
- Olive Oil 2 tablespoons
- Sun-Dried Tomatoes 5 pieces
- Olives stuffed with lemon 6 pieces
- Ground Black Pepper to taste
- Salt to taste
- Fresh basil leaves to taste
- Grated Pecorino Pepato Cheese to taste
Step-by-Step Guide
Step 1
Bring water for the pasta to a boil. While the water is heating, finely chop the onion and garlic, pour boiling water over the tomatoes, and remove their skins.
Step 2
Blend the chopped tomatoes and tuna along with the liquid from the can until smooth.
Step 3
Add the penne to the boiling salted water and cook until al dente, which is one minute less than the package instructions.
Step 4
Sauté the onion and garlic in olive oil until soft, then add the tomato-tuna mixture. After a couple of minutes, season the sauce with salt, pepper, and generously sprinkle with basil.
Step 5
Combine the cooked pasta with the sauce, add grated Parmesan cheese, and mix well.
Step 6
Serve the pasta on plates, garnished with freshly ground pepper, olives, and sun-dried tomatoes.
