Ingredients

  • Onion 1 head
  • Carrot 1 piece
  • Celery stalk 1 piece
  • Fresh basil leaves 0 oz
  • Olive Oil 0 fl oz
  • Sausages 10 oz
  • Nigella Seeds 1 teaspoon
  • Dried Rosemary 1 teaspoon
  • Chili Flakes a pinch
  • Rosemary 1 sprig
  • Garlic 4 cloves
  • Balsamic Vinegar 2 tablespoons
  • Baking Tomatoes 30 oz
  • Penne rigate 10 oz
  • Parmesan Cheese 0 oz
  • Olive Oil to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Peel the onion, carrot, and celery, then finely chop them along with the basil stems (set the leaves aside).

Step 2

Place a large skillet over medium heat with olive oil, then squeeze the sausage meat into the skillet, breaking it apart with a wooden spoon as you go. Sauté for 2 minutes, then add the fennel seeds, oregano, chili flakes, and rosemary leaves.

Step 3

Add the chopped vegetables and basil stems, then peel and finely grate the garlic. Cook for 10 minutes or until softened, stirring occasionally.

Step 4

Pour the balsamic vinegar into the skillet and let it bubble and reduce slightly.

Step 5

Crush the tomatoes with clean hands and add them to the skillet, then add a cup of water and the larger basil leaves. Bring to a boil and simmer on low heat for 20 minutes or until thickened.

Step 6

About 10 minutes in, cook the pasta in a pot of boiling salted water according to the package instructions, then drain, reserving a full cup of the cooking water.

Step 7

Add the pasta to the skillet, drizzling in a little of the reserved cooking water if needed. Taste and season with salt and black pepper, then remove from heat.

Step 8

Grate the parmesan cheese, sprinkle with the remaining basil leaves, and drizzle with extra virgin olive oil.
