Pasta with Three Types of Garlic
Ingredients
- Garlic 2 heads
- Coarse Salt to taste
- Ground Black Pepper to taste
- Spaghetti 20 oz
- Olive Oil 2 tablespoons
- Dry White Wine ¾ cup
- Chopped Sage Leaves 1 cup
- Chili Flakes 1 teaspoon
- Grated Pecorino Pepato Cheese to taste
Step-by-Step Guide
Step 1
Preheat the oven to 430°F. Wrap 1 head of garlic in foil and place it in the oven until soft, about 1 hour. Let cool and squeeze the pulp from the cloves into a small bowl.
Step 2
Meanwhile, cook the pasta in boiling salted water until al dente. Drain.
Step 3
Thinly slice 5 cloves of garlic and mince the remaining 3 cloves.
Step 4
Heat the olive oil in a skillet over medium heat. Add the sliced garlic and sauté until golden and crispy. Use a slotted spoon to transfer to a plate.
Step 5
In the same skillet with the oil, add the minced garlic and sauté for about 1.5 minutes, then add the roasted garlic and pour in the wine. Cook for about 3 minutes.
Step 6
Add the pasta, parsley, and red pepper flakes. Season with salt and pepper. Toss and serve, topped with the crispy garlic pieces and Parmesan cheese.
