Pasta with Sweet Pepper Sauce
Ingredients
- Pasta (corkscrew) 15 oz
- Basil 0 oz
- Orange Bell Peppers 10 oz
- Orange Bell Peppers 10 oz
- Black Cumin (Cumin) 1 teaspoon
- Olive Oil 2 teaspoons
- Garlic 5 cloves
- Mild Chili Spice 2 pieces
- Tomatoes 4 pieces
- Sun-Dried Tomatoes 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Remove seeds from the sweet peppers, cut each into 4 parts, and slice into strips.
Step 2
Lightly crush the cumin and sauté for a minute. Pour in the olive oil, and when it heats up, add the pepper strips, chopped garlic, and minced chili peppers. Cook on low heat for 40 minutes until the peppers are soft.
Step 3
Drop the tomatoes into boiling water, drain after a minute, peel the tomatoes, and chop them.
Step 4
Add the tomatoes along with the tomato paste to the peppers. Season with salt and pepper and continue cooking uncovered on high heat until the mixture thickens, about five minutes.
Step 5
Cook the pasta, drain the water, and return the pasta to a warm pot, adding the warm sauce. Set on low heat. Stir and cook for about a minute.
Step 6
Serve immediately on warmed plates, garnished with basil.
