Pasta with Shrimp in Tomato-Garlic Sauce
Ingredients
- Spaghetti 10 oz
- Shrimp 20 oz
- Tomatoes 2 pieces
- Garlic 1 head
- Passata Tomato Sauce to taste
- Lime 2 pieces
- Fresh basil leaves to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the shrimp, let them cool, and peel them.
Step 2
Marinate the shrimp with finely chopped garlic (3 cloves), pepper, salt, and the juice of 2 limes or small lemons.
Step 3
Place in the refrigerator for 20–30 minutes to allow the shrimp to soak up the flavors.
Step 4
Cook the spaghetti, drain it, place it back in the pot, and drizzle with olive oil.
Step 5
Make the sauce. Pour olive oil into a skillet, sauté finely chopped garlic (5 cloves), and add finely chopped tomatoes that have been blanched in boiling water for a minute and peeled.
Step 6
Mix the tomatoes with the garlic, add finely chopped basil (or dried), salt and pepper, the shrimp, and then a small jar of tomato paste.
Step 7
Cook over medium heat for 3–5 minutes.
Step 8
Add the spaghetti and mix thoroughly.
Step 9
When serving, you can add fresh arugula leaves and grated cheese.
