Ingredients

  • Spaghetti 15 oz
  • Garlic 2 cloves
  • Mild Chili Spice 2 pieces
  • Peeled Cooked Shrimp 15 oz
  • Dry White Wine 1 cup
  • Sun-Dried Tomatoes 6 pieces
  • Lemon 1 piece
  • Arugula 1 bunch
  • Olive Oil to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Cook the spaghetti in a large pot of salted water according to the package instructions. Meanwhile, heat three tablespoons of olive oil in a large skillet. Crush the garlic cloves to release their juices. Add the garlic and crumble two small dried chili peppers into the skillet. When the garlic starts to change color, add the shrimp and sauté for one minute. Then pour in the white wine, add the sun-dried tomatoes, previously crushed to resemble a puree, and cook on low heat for a couple of minutes.

Step 2

When the pasta is ready, drain it, reserving a small amount of the cooking water. Add the spaghetti to the sauce and mix well. Pour in the lemon juice and stir in half of the arugula. Add a bit of the reserved water if you want to soften the flavor.

Step 3

Season with salt and pepper if needed. Plate the dish. Garnish with grated lemon zest and the remaining arugula.
