
Pasta with Salmon and Spinach in Cream

Description
Salmon can be replaced with trout or salmon. Olive oil can be substituted with butter. White pepper can be replaced with regular ground black pepper, but white pepper is less pungent and therefore more suitable for the delicate flavor of the fish.
Ingredients
- Pasta (corkscrew) 10 oz
- Salmon 10 oz
- Spinach 10 oz
- Cream 22% 5 fl oz
- Parmesan Cheese 5 oz
- Garlic 2 cloves
- Meyer Lemon Juice to taste
- Olive Oil to taste
- Salt to taste
- White Pepper (whole) to taste
- Ground Nutmeg a pinch
- Oregano a pinch
Step-by-Step Guide
Step 1
Rinse the fish, remove the skin and bones, drizzle with lemon juice, and cut into cubes.
Step 2
Heat a clove of garlic in olive oil. Add the salmon and sauté over high heat for five minutes, then remove the garlic, reduce the heat, and cook for another 7 minutes.
Step 3
Add spices (salt, pepper, oregano) and cream, simmer until the cream thickens (about 10 minutes). Season with nutmeg and add finely chopped spinach.
Step 4
Cook the pasta until al dente.
Step 5
Mix the cooked pasta with the sauce, sprinkle with grated cheese, and serve.
