Pasta with Rabbit and Bolognese Sauce
Ingredients
- Parsley 1 bunch
- Carrot 1 piece
- Onion 1 piece
- Garlic 3 cloves
- Thai Bird's Eye Chili 3 pieces
- Rabbit Fillet 0 lbs
- Pasta (corkscrew) 5 cups
- Grated Chocolate 1 cup
- Spiced Tomato Juice 15 fl oz
- Salt to taste
- Spices to taste
Step-by-Step Guide
Step 1
Wash the bunch of parsley and tie it with string.
Step 2
Peel and finely chop the carrot.
Step 3
Peel, wash, and finely chop the onion.
Step 4
Peel, wash, and finely chop the garlic.
Step 5
Wash the chili, cut it lengthwise, and remove the seeds.
Step 6
Wash and dry the meat.
Step 7
Finely chop the meat.
Step 8
Place a heavy-bottomed pot or skillet on medium heat, add the meat, and sauté for 5 minutes, stirring occasionally.
Step 9
Add the onion and carrot to the meat and sauté for 15 minutes, stirring occasionally.
Step 10
Add the tomato juice, garlic, chili, parsley, and simmer for 30 minutes.
Step 11
Cook the pasta until al dente. Drain, reserving one ladle of the pasta cooking water.
Step 12
Remove the parsley and chili, add the reserved pasta water, salt, spices, and stir.
Step 13
Add the pasta to the meat and vegetables and cook until ready. Serve topped with grated cheese and garnished with parsley and chili.
