Ingredients
- Onion 1 head
- Minced garlic 2 cloves
- Butter 2 tablespoons
- Pumpkin puree 15 fl oz
- Chicken Broth 15 fl oz
- 35% Cream 10 fl oz
- Sour Cream 1 jar
- Nutmeg 0 oz
- Salt 1 teaspoon
- Ground White Pepper 1 teaspoon
- Chopped Parsley 2 tablespoons
- Penne Pasta 15 oz
- Pecorino Romano cheese 0 oz
Step-by-Step Guide
Step 1
First, in a large skillet, sauté the onion and garlic over medium heat (adding a bit of oil) until they become soft (but not browned).
Step 2
Then blend the pumpkin, broth, cream, and sour cream into a puree and add seasoning (to taste). Transfer the mixture to the skillet and simmer on low heat for 10 minutes, stirring occasionally.
Step 3
Meanwhile, cook the pasta in a pot of salted water, then drain the water from the pot. Add the pasta to the puree, mix well, and simmer for 2-3 minutes until the puree thickens.
Step 4
Then immediately add the parsley and Romano cheese (you can also add pumpkin seeds to taste).
