Ingredients
- Olive Oil 1 tablespoon
- Onion 1 head
- Fresh Mushrooms 10 oz
- Garlic 1 clove
- Chopped Sage Leaves 1 tablespoon
- Chili Flakes ½ teaspoon
- Ground Nutmeg ¼ teaspoon
- Pasta (corkscrew) 15 oz
- Chestnut puree 1 cup
- Cream (40%) ¼ cup
- Goat cheese ½ cup
- Salt to taste
- Ground Black Pepper to taste
- Butter 1 tablespoon
- Chopped Sage Leaves to taste
Step-by-Step Guide
Step 1
In a skillet, heat the olive oil, add finely chopped onion and thinly sliced mushrooms. Sauté over low heat for about 20 minutes until the mushrooms start to caramelize.
Step 2
Meanwhile, boil the pasta until al dente.
Step 3
Add minced garlic, finely chopped sage, chili flakes, and nutmeg to the skillet. Sauté for 1 minute.
Step 4
Then add the pumpkin puree, cream, and crumbled cheese. Season with salt and pepper. Cook for a few minutes until the sauce thickens slightly.
Step 5
In a clean skillet, melt the butter and add a handful of sage leaves. Fry until crispy.
Step 6
Add the pasta to the sauce, mix well, and serve with crispy sage leaves.
