Ingredients
- Pasta (corkscrew) 5 oz
- Onion 1 head
- Pumpkin 1 piece
- Capers 1 tablespoon
- Spices to taste
Step-by-Step Guide
Step 1
Boil the colorful bowtie pasta (or 1 "nest" of fine vermicelli) in salted water. Peel and finely chop 1 medium-sized onion. In a non-stick skillet, heat 1 teaspoon of vegetable oil and sauté the onion until translucent.
Step 2
Peel the pumpkin, removing the seeds and skin, then grate it using a coarse grater. Take 1 cup of the grated pumpkin, add it to a skillet, mix well, pour in a little water, and simmer for about 15 minutes, until the pumpkin becomes tender.
Step 3
Add the pasta and 1 teaspoon of capers. Mix everything together. Season with salt and pepper to taste, and sprinkle with 1 teaspoon of chopped parsley or another aromatic herb: dill, celery, fennel, or any dried mixed herbs.
