Pasta with Pumpkin
Ingredients
- Grated Pecorino Pepato Cheese 5 oz
- Pasta (corkscrew) 20 oz
- Butter 0 oz
- Leek 1 piece
- Celery stalk 1 piece
- Pumpkin 0 lbs
- Chicken Broth 15 fl oz
- Salt ½ teaspoon
- Ground Black Pepper ½ teaspoon
- Ground Nutmeg 0.1 teaspoon
- Whipped Cream 0.7 cup
Step-by-Step Guide
Step 1
Melt the butter in a large pot over medium heat, add finely chopped leek and celery, and sauté for a few minutes.
Step 2
Add finely chopped pumpkin to the pot and sauté for 2-3 minutes.
Step 3
Pour chicken broth into the pumpkin and bring to a boil.
Step 4
Reduce the heat, cover the pot with a lid, and continue cooking on medium heat for 20 minutes.
Step 5
Add salt and spices to the pumpkin, stir, and remove from heat.
Step 6
Transfer the pumpkin mixture to a blender and blend until smooth.
Step 7
Pour the pumpkin puree back into the pot.
Step 8
Add cream to the puree and cook over low heat until thickened, stirring frequently.
Step 9
While preparing the sauce, boil the pasta so that it is ready at the same time as the sauce. (Cook the pasta for 1 minute less than indicated on the package.)
Step 10
Serve hot with grated Parmesan.
