Pasta with Pattypans
Ingredients
- Pattypans 10 oz
- Garlic 2 cloves
- Shallot 1 head
- Canned Tomatoes (Pelati) 5 oz
- Fresh basil leaves 5 pieces
- Spaghetti 10 oz
- Olive Oil 0 fl oz
- Parmesan Cheese to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
In a large skillet, bring water to a boil, add salt generously, and add the spaghetti. Cook for 2 minutes less than the package instructions.
Step 3
Slice the pattypans into thin wedges.
Step 4
Finely chop the garlic and shallot.
Step 5
In a skillet, heat the olive oil and sauté the pattypans for 2 minutes.
Step 6
Add the garlic and sauté for another 30 seconds until fragrant.
Step 7
In another skillet, sauté the shallot in olive oil until translucent.
Step 8
Add the shallot and tomatoes to the pattypans, tear in the basil leaves, and season with a little salt and pepper.
Step 9
Drain the cooked spaghetti, reserving a cup of the pasta water.
Step 10
Add the spaghetti to the skillet with the vegetables, pour in a little of the reserved pasta water, and mix. If the sauce is too thick, add more water.
Step 11
Serve the pasta generously sprinkled with grated Parmesan.
