  • Onion 2 pieces
  • 20% Cream 1 cup
  • Garlic 2 cloves
  • Grated Parmesan cheese to taste

  • Ground Black Pepper to taste
  • Parsley to taste

Step-by-Step Guide

Step 1

Start by preparing the necessary ingredients. First, thoroughly rinse the fresh oyster mushrooms under running water (clean them if needed), then place them on a paper towel to drain excess water. Next, cut the oyster mushrooms into large cubes and set them aside. Note that the stems can be omitted as they are quite tough, but they can be used for making broths and various soups.

Step 2

Peel the onion (if it's small, use 2 pieces), rinse it, and then chop it into small cubes. Finely chop the peeled garlic cloves with a knife or press them through a garlic press. Rinse the herbs under running water, spread them on a towel to dry, and then chop them finely.

Step 3

Now that all the ingredients are prepared, we can start cooking the dish. Take a fairly large (or more accurately, a spacious) frying pan, preferably with high sides for easy tossing of the cooked pasta, and heat a bit of olive oil in it (you can substitute olive oil with sunflower oil if desired). Add the chopped onion and garlic to the pan, sautéing them together, stirring occasionally with a spatula, until they become translucent.

Step 4

After that, add the prepared oyster mushrooms to the pan and mix them with the onion. Continue cooking the mushrooms until they become soft (about 4-7 minutes). Keep the heat moderate (slightly below medium). Don’t forget to add salt and black pepper (preferably freshly ground).

Step 5

Now pour the cream into the pan and, mixing it with the contents, continue to simmer the mushrooms under a lid until the cream thickens. Then, just add the finely chopped herbs and taste the sauce for salt and pepper (add any missing spices if necessary). If desired, you can experiment and add other favorite spices and seasonings to the dish, such as dried basil, oregano, or aromatic Italian herbs.

Step 6

While the sauce is cooking, bring a pot of salted water to a boil for the pasta. It's important not to cook the pasta in advance, as the main rule here is that the sauce should wait for the pasta, not the other way around! Otherwise, the pasta will lose its flavor, while the sauce can always be reheated. So, cook the pasta in boiling, lightly salted water until al dente (which means almost cooked, so they are still slightly firm).

Step 7

Drain the cooked pasta and immediately add it to the pan with the sauce. Heat everything together for about 1-2 minutes, then serve immediately (exclusively hot!). Sprinkle the finished dish with grated Parmesan cheese and garnish with fresh herb leaves.
