
Pasta with Lemon Sauce

The ingredients here are calculated for 6 people (if you are not planning anything else, but if you have fish or meat later, reduce everything by half).
Ingredients
- Spaghetti 20 oz
- Lemon 4 pieces
- Parmesan Cheese 5 oz
- Basil 1 bunch
- Olive Oil 5 fl oz
- Sea Salt ½ teaspoon
Step-by-Step Guide
Step 1
Cook the spaghetti in salted water (do not overcook!), then drain the water.
Step 2
Grate the zest of 1 lemon using a fine grater.
Step 3
Juice all four lemons.
Step 4
Grate the Parmesan cheese using a fine grater.
Step 5
Finely chop the basil leaves (leave a few whole leaves).
Step 6
Set aside part of the grated Parmesan, and gradually add olive oil and lemon juice to the remaining cheese, mixing everything until it reaches a thick sauce consistency similar to mayonnaise.
Step 7
Toss the pasta with the sauce (you will need about a third of it), add the chopped basil, and mix everything together.
Step 8
Serve the spaghetti on plates, sprinkle with lemon zest, remaining Parmesan, and basil leaves. Serve immediately with the remaining sauce.
