
Pasta with Ground Meat and Eggplant

Ingredients
- Pasta (corkscrew) 5 oz
- Ground meat 5 oz
- Eggplants 2 pieces
- Tomatoes 3 pieces
- Onion 2 pieces
- Garlic 2 cloves
- Spices to taste
- Salt to taste
- Basil 1 bunch
- Vegetable Oil to taste
- Passata Tomato Sauce to taste
Step-by-Step Guide
Step 1
First, wash and cut the eggplants, removing seeds if necessary. Place them in a bowl and sprinkle with salt. Let sit for 15–20 minutes.
Step 2
Peel and chop the onion and garlic. Heat oil in a pan, sauté the onion, then add the ground meat. I usually use homemade, but recently I made it with turkey meat, which is also very tasty! Add the garlic. Sauté.
Step 3
Rinse the eggplants from the salt and add them to the ground meat. Fry, stirring. Then add diced tomatoes, salt, tomato sauce, pepper, and spices (I usually use herbes de Provence) and simmer for a few minutes.
Step 4
Meanwhile, boil the pasta according to the instructions and drain the water. Mix the pasta with the sauce, sprinkle with chopped basil, and you can add grated cheese.
