Pasta with fava beans, tomatoes, and Italian sausages
Ingredients
- Olive Oil 2 tablespoons
- Onion 0 oz
- Garlic 2 cloves
- Chili Flakes a pinch
- Sausages 10 oz
- Dry White Wine ¼ cup
- Fava Beans 15 oz
- Spiced Tomato Juice 10 oz
- Fettuccine Pasta 10 oz
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
Boil the fava beans in boiling water for 3 minutes. Drain, cool slightly, and remove the tough outer skin.
Step 2
Heat the olive oil in a deep skillet over medium heat. Add the finely chopped onion, minced garlic, and red pepper flakes. Sauté for about 6 minutes. Remove the casing from the sausages and add the filling to the skillet. Break it up with a wooden spoon and fry until browned, about 3 minutes. Add the wine and cook for another minute. Then add the tomatoes and beans. Simmer for about 5 minutes. Season with salt and pepper.
Step 3
Meanwhile, cook the pasta in a large pot of boiling salted water until al dente. Drain, reserving 0.5 cup of the pasta water, and return the pasta to the pot.
Step 4
Add the sauce to the pasta and mix well. Place over heat for about 2 minutes, adding the reserved pasta water. Stir in 2 tablespoons of grated cheese and transfer to a serving bowl. Sprinkle with the remaining cheese and serve.
