Pasta with Eggplant and Mushrooms
Ingredients
- Pasta 10 oz
- Eggplant 1 piece
- Champignon Mushrooms 10 oz
- Garlic 3 cloves
- Tomato Paste 1 tablespoon
- Canned tomatoes 1 can
- Olive Oil 3 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the eggplant into large cubes, salt well, and let it sit for 20-30 minutes, then rinse and dry with a paper towel.
Step 2
Heat a large skillet and sauté the eggplant with finely chopped garlic in oil.
Step 3
Add salt and sauté for 3-5 minutes. Add the chopped mushrooms and sauté for another 2 minutes.
Step 4
Add the tomatoes and tomato paste to the same skillet. Season with salt and pepper. Bring to a boil.
Step 5
Meanwhile, cook the pasta al dente.
Step 6
Add the pasta to the skillet with the vegetables and mix well.
Step 7
Serve the pasta on plates and garnish with fresh herbs and Parmesan cheese if desired.
