Ingredients
- Penne Pasta 10 oz
- Olive Oil 1 tablespoon
- Onion 1 head
- Celery stalks 3 pieces
- Eggplant 1 piece
- Garlic 2 cloves
- Sun-Dried Tomatoes 15 oz
- Olives 5 oz
- Capers 0 oz
- Dried Oregano 1 tablespoon
- Balsamic Vinegar 2 tablespoons
- Sugar 1 tablespoon
Step-by-Step Guide
Step 1
Cook the pasta in a large pot of lightly salted boiling water until al dente.
Step 2
While the pasta is cooking, heat the oil in a large skillet over medium to high heat.
Step 3
Add the onion and celery and cook for 5 minutes until softened, stirring occasionally.
Step 4
Add the eggplant and cook until softened, about 5 minutes, stirring to prevent sticking.
Step 5
Add the garlic, tomatoes, olives, capers, oregano, balsamic vinegar, and sugar. Reduce the heat and cook for another 5-10 minutes.
Step 6
Season with salt and pepper to taste. Toss with the pasta and serve.
