Pasta with Dorado and Cherry Tomatoes
Ingredients
- Marinated cherries 5 oz
- Skin-on dorado fillet 2 pieces
- Basil 0 oz
- Mild Chili Spice 1 piece
- Garlic 2 cloves
- Dry White Wine 5 fl oz
- Olive Oil 0 fl oz
- Crushed Tomatoes in Their Own Juice 0 oz
- Paccheri Pasta 5 oz
Step-by-Step Guide
Step 1
Place the pasta in a saucepan with boiling salted water and cook over medium heat for 6 minutes, then drain the pasta in a colander, saving the water.
Step 2
Chop the basil roughly and cut the cherry tomatoes in half.
Step 3
Finely chop half of the chili pepper along with the seeds, crush the garlic, peel it, and chop it finely.
Step 4
Chop the tomatoes in their own juice finely. Heat 2 tablespoons of olive oil in a skillet and warm the chili pepper and garlic over medium heat for 10 seconds, add 70 ml of wine, and as soon as the wine boils, add the chopped tomatoes in their own juice and 2/3 of the basil.
Step 5
Place the fish fillets in the skillet and simmer in the sauce for 1.5 minutes on each side over medium heat, season with salt and pepper, break the fish into small pieces directly in the skillet (using two spatulas), and remove the skin if desired.
Step 6
Add the cooked pasta to the skillet, mix, and warm over low heat for 1 minute; if the sauce is too dry, add a little of the water used to cook the pasta, season with salt and pepper.
Step 7
Transfer the pasta to a plate, garnish with cherry tomatoes on top, sprinkle with the remaining basil, drizzle with olive oil, and serve.
