Ingredients
- Onion 1 head
- Minced garlic 2 cloves
- Olive Oil 2 tablespoons
- Pumpkin puree 2 cups
- Vegetable Broth 2 cups
- Sour Cream 5 tablespoons
- 35% Cream ¼ cup
- Nutmeg ¼ teaspoon
- Salt 1 teaspoon
- Ground White Pepper ¼ teaspoon
- Chopped Parsley 2 tablespoons
- Grated Pecorino Romano Cheese 0 oz
- Penne Pasta 15 oz
Step-by-Step Guide
Step 1
In a large skillet, sauté the onion and garlic in vegetable oil over medium heat until softened and golden. The onion and garlic should not blacken.
Step 2
In a bowl, mix the pumpkin puree, broth, and cream, then pour into the skillet. Season to taste. Simmer, stirring occasionally, for 10 minutes.
Step 3
Meanwhile, cook the pasta al dente. Drain the pasta and transfer it to the skillet with the sauce. Toss for 2-3 minutes.
Step 4
Add pumpkin seeds, Romano cheese, and parsley.
