
Pasta with Chicken, Tomatoes, and Avocado

Description
This easy-to-make pasta with fresh arugula and avocado is perfect for a summer dinner.
Ingredients
- Pasta (corkscrew) 5 oz
- Marinated cherries 10 pieces
- Skin-On Chicken Breasts 1 piece
- Dill to taste
- Ground Black Pepper to taste
- Olive Oil 2 tablespoons
- Cheese Spread 0 oz
- Arugula 1 bunch
- Avocado 1 piece
Step-by-Step Guide
Step 1
Wash the chicken breast and cut it into small pieces. Sauté in olive oil with salt and black pepper.
Step 2
Cut the tomatoes in half and chop the dill. Add to the chicken and simmer together for 3–5 minutes.
Step 3
Grate the cheese. Peel and slice the avocado.
Step 4
Cook the fusilli or penne pasta, then drain the water.
Step 5
On a plate, place the pasta, top with the chicken and tomatoes, and sprinkle with cheese. Garnish with avocado slices and arugula, and drizzle with olive oil.
