Ingredients
- Pasta (corkscrew) 30 oz
- Marinated cherries 10 oz
- Olives stuffed with lemon 20 pieces
- Olive Oil 3 tablespoons
- Grated Pecorino Pepato Cheese 5 oz
- Parsley to taste
- Salt to taste
- Ground Black Pepper to taste
- Garlic to taste
Step-by-Step Guide
Step 1
Cook the pasta until al dente, drain the water, and set the pasta aside.
Step 2
Wash the tomatoes and cut them into quarters.
Step 3
Remove the pits from the olives and finely chop the flesh.
Step 4
Chop the garlic and sauté it in olive oil for a few seconds.
Step 5
Add the olives, tomatoes, parsley, and seasonings, and lightly sauté the mixture for about a minute.
Step 6
Add the resulting sauce to the cooked pasta.
Step 7
Sprinkle with grated parmesan and heat the pasta until the cheese is melted.
