Pasta with chanterelles and parmesan
Ingredients
- Pickled Chanterelles 2 cups
- Coarse Salt to taste
- Ground Black Pepper to taste
- Butter 1 tablespoon
- Olive Oil 1 tablespoon
- Garlic 1 clove
- Conchiglie Pasta 20 oz
- Chopped Sage Leaves 0.3 cups
- Grated Pecorino Pepato Cheese to taste
Step-by-Step Guide
Step 1
Cook the pasta in boiling salted water until al dente. Drain.
Step 2
In a large saucepan over medium heat, heat the butter and olive oil, add the minced garlic, and sauté for a minute. Then add the chopped chanterelles, season with salt and pepper. Sauté until tender, about 2–3 minutes. Stir in the parsley.
Step 3
Then add the pasta, mix well, and serve, topped with Parmesan.
