Ingredients
- Pasta (corkscrew) 10 oz
- Olive Oil to taste
- Spanish onions 1 head
- Dry White Wine ⅓ cup
- Spinach 1 bunch
- Cauliflower to taste
- Grated Lemon Zest to taste
Step-by-Step Guide
Step 1
Boil the pasta in salted boiling water as instructed on the package.
Step 2
In a pot, sauté the chopped onion in olive oil for 3-5 minutes.
Step 3
Pour in the wine and cook for another 5 minutes.
Step 4
Add the spinach and chopped cauliflower, and cook for another 8 minutes.
Step 5
Add the zest, pasta, and mix — the sauce should coat the pasta evenly.
Step 6
Serve, drizzled with oil.
