Pasta with Cauliflower and Garlic

Description
Instead of ricotta, you can use cream cheese, like Philadelphia.
Ingredients
- Pasta (corkscrew) 10 oz
- Garlic 4 cloves
- Cauliflower 20 oz
- Olive Oil to taste
- Breadcrumbs to taste
- Ricotta cheese to taste
Step-by-Step Guide
Step 1
Divide the cauliflower into florets and boil until tender in salted water. It should be soft enough but not falling apart.
Step 2
In the water from the cauliflower, cook the pasta (al dente). Also, reserve about half a cup of this water for the sauce.
Step 3
Meanwhile, in a deep skillet, heat olive oil (it should be generous, about 2–3 tablespoons), add finely chopped garlic, and then add the cauliflower, previously chopped into smaller pieces. Add a bit of the reserved cauliflower water as well.
Step 4
When the pasta is ready, add it to the skillet for 2–3 minutes.
Step 5
To the finished pasta, add the breadcrumbs (preferably homemade, so they are not too fine) or croutons and cheese.
