  • Arugula 1 bunch
  • Walnuts 0 oz
  • Olive Oil 4 spoons
  • Spaghetti 20 oz
  • Grated Pecorino Pepato Cheese 5 oz
  • Fresh basil leaves to taste

Step-by-Step Guide

Step 1

In a blender, pour in the olive oil and gradually add the arugula, grated or chopped pecorino cheese, and halved walnuts, along with more oil if needed. Blend on low speed to keep the ingredients recognizable in the pesto. Once the mixture is uniform and thick like sour cream, the pesto is ready.

Step 2

Cook the spaghetti in lightly salted water until al dente.

Step 3

Drain the water completely and mix the pasta with the freshly prepared pesto in the pot.

Step 4

Plate the mixture and garnish with a sprig of fresh basil.

Step 5

Serve with freshly grated pecorino.
