Pasta Salad with Celery and Mushrooms
Ingredients
- Pasta (corkscrew) 10 oz
- Morels 5 oz
- Celery stalk 2 pieces
- Yogurt powder 0 oz
- Vegetable Oil 1 tablespoon
- Parsley 1 bunch
- Meyer Lemon Juice 1 teaspoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cook the pasta according to the package instructions until al dente. Set aside.
Step 2
In a skillet over medium heat, heat the oil and add the chopped mushrooms. Sauté for about 5 minutes covered. Add the chopped celery and parsley along with a couple of tablespoons of water, cover again, and cook for 6 minutes.
Step 3
Mix the yogurt, lemon juice, salt, and pepper. Pour the mixture over the contents of the skillet, add the pasta, reduce the heat, and cover for 5-10 minutes.
