Pasta Primavera with Mint
Ingredients
- Butter 5 oz
- Chopped Parsley 1½ tablespoons
- Mint 1½ tablespoons
- Onion 1 head
- Peas 15 oz
- Sugar Snap Peas 5 oz
- Zucchini 5 oz
- Green Beans 5 oz
- Tagliatelle Pasta 15 oz
- Olive Oil to taste
- Lemon Zest 1 tablespoon
- Lemon Juice 1 tablespoon
- Basil leaves to taste
Step-by-Step Guide
Step 1
Melt the butter with parsley, green onion, and mint, and set aside in a warm place. Prepare all the vegetables: shell the peas, rinse the carrots, and slice the zucchini and green beans thinly.
Step 2
Bring water to a boil in two pots (one for the vegetables, the other for the pasta). Lightly salt the water in one pot, add the pasta, and cook according to the package instructions for 10-12 minutes. While the pasta is cooking, add the carrots to the other pot and boil for 2 minutes. Then add the peas, beans, and zucchini and continue to boil for 3 minutes. Drain the water from the vegetables and pasta. Continue cooking the pasta in the pot, adding a bit of olive oil, lemon zest, and lemon juice. Also toss the vegetables in the pot, seasoning with salt and pepper to taste.
Step 3
Serve the pasta on plates, sprinkle with black pepper, and top with the vegetables. Add basil leaves to taste.
