Pasta primavera with marinara sauce
Ingredients
- Carrot 1 piece
- Courgette 1 piece
- Eggplants ½ pieces
- Sweet Pepper 1 piece
- Sweet Red Onion ½ heads
- Olive Oil 3 spoons
- Salt to taste
- Ground Black Pepper to taste
- Italian herb blend to taste
- Marinara sauce ¼ glasses
- Marinated cherries 15 oz
- Pasta shells 5 oz
- Grated Pecorino Pepato Cheese to taste
Step-by-Step Guide
Step 1
Sauté the chopped vegetables in vegetable oil.
Step 2
While the vegetables are frying, boil the pasta in salted water.
Step 3
Add the tomato sauce to the vegetables (you can add more water if needed). Season with dry Italian herbs to taste. Salt and pepper to taste.
Step 4
Once the pasta is ready, drain the water, leaving a couple of tablespoons of the cooking water for the sauce, and add the pasta directly to the skillet with the vegetables. Add halved cherry tomatoes.
Step 5
Serve with grated Parmesan cheese and chopped fresh basil.
