Pasta Primavera with Croutons
Ingredients
- Pasta 10 oz
- Olive Oil 3 tablespoons
- Green Beans 10 oz
- Onion 1 head
- Garlic 4 cloves
- Ground red pepper 1 teaspoon
- Zucchini 3 pieces
- Red Bell Pepper 2 pieces
- Basil 0 oz
- Oregano 1 teaspoon
- Croutons 0 oz
- Grated Parmesan cheese to taste
- Extra virgin olive oil to taste
Step-by-Step Guide
Step 1
Cook the pasta according to the package instructions.
Step 2
Meanwhile, bring salted water to a boil in a large pot; cook the green beans for 3 minutes. Place the beans in a colander and rinse under cold water.
Step 3
Heat 2 tablespoons of oil in a large skillet over medium heat. Add the green beans, onion, garlic, and ground red pepper, and cook covered for 3 minutes. Add the zucchini, bell pepper, basil, and oregano, and cook uncovered for another 5 minutes or until the vegetables are al dente; do not overcook. Season with salt to taste.
Step 4
Heat the remaining 1 tablespoon of oil in another skillet over medium heat. Add the croutons and sauté until golden brown, about 5 minutes.
Step 5
Combine the pasta with the vegetables; sprinkle with croutons, cheese, drizzle with olive oil, and serve.
