Ingredients

  • Penne rigate 10 oz
  • Blue Cheese 0 oz
  • Parmesan Cheese 0 oz
  • Russian Cheese 0 oz
  • Green Butter 0 oz
  • Butter 2 tablespoons
  • Milk 10 fl oz
  • Wheat Flour 1 tablespoon
  • Salt a pinch
  • Vegetable Oil 1 teaspoon
  • Garlic 1 clove
  • Ground Black Pepper a pinch
  • Ground Nutmeg a pinch

Step-by-Step Guide

Step 1

Bring water to a boil and add salt. To prevent the penne from sticking to the sides and bottom of the pot (which we will need for the sauce, saving time on washing), you can add a drop of vegetable oil to the water. After that, add the penne to the pot, slightly reducing the heat.

Step 2

Cook the penne until al dente (no more than eight minutes; for safety, you can cook it for one minute less than indicated on the package).

Step 3

Transfer the penne to a colander. We will prepare the balsamella sauce in the empty pot.

Step 4

Heat the glass of milk in the microwave (I do this while the penne is cooking), slightly bringing it to a boil (if it does boil, it's important to remove the foam). Set the heat to medium or even low. Melt the butter in the pot.

Step 5

Add the flour and mix well with a wooden spoon.

Step 6

Pour in one-third of the milk and mix thoroughly until smooth, ensuring there are no lumps. If it doesn't work, you can increase the heat and start stirring faster. Then pour in the second third of the milk—mix again until smooth, then add the last third and mix again.

Step 7

Reduce the heat to the lowest setting. Add grated or finely chopped Russian cheese to the sauce (I would not recommend using Poshikhon cheese as it always clumps). Italians add Parmesan (if you decide to add Parmesan, remember to grate it very finely, otherwise it will take too long to melt). Stir until the sauce is smooth.

Step 8

Squeeze the garlic into the pot. Add the green cheese. Black pepper. Salt, if needed after the salty green cheese. Nutmeg. Mix everything together.

Step 9

Only after this, add the precious blue cheese, previously chopped finely. Then immediately add the penne to the pot and mix.

Step 10

Serve on plates. Sprinkle with grated Parmesan.

Step 11

Delicious when served hot with fresh sliced tomatoes.
