Prepare the marinade: mix mentsukan, mirin, ponzu, soy sauce, truffle oil, 15 grams of olive oil, and honey. Add salt and pepper to taste.

Step 2

Prepare the green oil: mix 100 grams of finely chopped herbs with 40 grams of olive oil.

Step 3

Slice the peeled parsley root very thinly on a mandoline and arrange it in an even layer on a plate, just like you would with carpaccio.

Step 4

Pour 30 grams of marinade over the root, and after 10 minutes, add 15 grams of green oil.
