- Parmesan Cheese 5 oz
- Potato protein 2 teaspoons
Step-by-Step Guide
Step 1
Grate the Parmesan cheese on a fine grater.
Step 2
Add the starch to the grated cheese and gently mix to ensure the starch coats each 'feather' of the Parmesan.
Step 3
Prepare tongs to easily pick up the hot cheese 'web' from the pan and a glass with a sufficiently wide bottom (the width of the bottom of the glass is the width of your Parmesan basket) and turn the glass upside down.
Step 4
Heat a small frying pan (choose the diameter of the pan based on how high you want the sides of your basket to be and the diameter of its bottom. Everything is done by eye).
Step 5
Take a generous pinch of grated cheese with starch and sprinkle it evenly across the bottom of the pan, ensuring that the cheese 'feathers' form a 'web', leaving some gaps in the pan but without large spaces.
Step 6
Fry the cheese web for about 2 minutes until the cheese takes on a light golden hue.
Step 7
Carefully but quickly, use the tongs to lift the cheese from the pan and place it on the glass, with the side that was not fried facing down. Squeeze the web into the shape of the glass with your hands. Hold the cheese on the glass until it cools and hardens slightly. Gently remove the basket from the sides of the glass and place it on a plate.
